Gluten Free Gingerbread Cookies

Bake Time: 11 minutes

Oven Temperature: 325℉

Recipe:

½ cup (1 stick) Butter, softened

½ cup Coconut oil

1 ½ cups brown sugar

1 apple sauce (¼ cup)

1 tsp pure vanilla extract

¼ cup Honey

½ tsp salt

1 tsp baking powder (baking powder= fluffier or same amount baking soda= flatter)

Special Gingerbread spice mix=

  • 1½ tsp ground cinnamon
  • ½ tsp pumpkin spice (or allspice)
  • 3 drops of vitality Ginger essential oil
  • 2 drops of vitality Clove essential oil

3 cups flour

  • Buttercream frosting for the decorations

Directions:

  1. First mix the butter, coconut oil, apple sauce, and vanilla extract in a bowl. Then add in brown sugar, honey, salt, and baking powder until smooth.

  1. Next you will make the special gingerbread spice mix with the Young Living vitality essential oils. You will add the ground cinnamon and pumpkin spice into the wet mixture. Then you will carefully drop in the Ginger and Clove Young Living vitality essential oils into the mix. Note: the oils can come out fast so make sure you are paying attention because a little goes a long way. I will also recommend you use Young Living Essential oils when baking and ingesting anything. If you don't have essential oils you could always just use 4tsp of gingerbread spice from any store in the spice section.

  1. After adding the Special Gingerbread Mix into the butter sugar mix, you will slowly add in the GF all purpose flour. Mix until all combined.

  1. Divide the dough into two portions and set aside in bowl. Wrap the top of the bowl with plastic wrap and refrigerate for 1hr (you can go longer if needed). To make the cutouts, you need the dough to be firm.

  1. Once ready to bake, preheat oven to 325. Roll out one portion of the dough on a floured surface. Cut out shapes using christmas cookie cutters (any cookie cutters will do). Repeat with the rest of the dough until there is either no more dough left or you are tired of rolling out more and more and more dough to cut. Either way is fine.

  1. Put cookies onto a greased pan. Bake for 10min (if needed you can go longer but know that gingerbread cookies harden quite fast so be watchful and only go for a few extra minutes). *Even if they don't seem totally done when you take them out, let them set and they will harden once cool.

  1. Once done, allow cookies to cool completely (try 10min). Once cooled, pipe icing onto the gingerbread cookies and either eat now or let the icing set.

You have now finished baking the All Holiday Gluten Free Gingerbread Cookies!!!!

Bon Appetit!
